Nose of rich, black cherry, hint of raspberry and Rutherford dust, same on the palate, big body, tasty, mouth filling fruit, medium long finish and pleasant aftertaste.

This baby came out of the bottle humming. Delicate, balanced, and structured. Not what I was expecting from SO. Fruit had softened with the tannins. I didn’t write down my tasting notes, but this well-preserved bottle was a pleasure to drink.

Seven years since my last bottle and definitely think this is nearing the end of its drinking window. Not at all bad, but fruit has dissipated, to a wisp of sour cherry at the open. Very dry, retains a hint of richness, but acid pop more predominant. Definitely feels like time to drink up.

Blackberry aroma on opening; very light, slight flavor. Color indicating it was time, or maybe a little late to drink. Bought, and shipped direct from from the vineyard in 2010-11. Stored well. Decanted. Somewhat opened in 1.5 hours, but still very light, slight fruit, some vanilla, very smooth palate, but very little flavor. Probably much better, or peaked in 2020, maybe 2021.

Drank this on my 25th wedding anniversary and it was magnificent. We drink this wine every year and this was the best bottle in over a decade. Strong dark red color in the glass, just the slightest bricking at the rim. Nose is fantastic: wonderful depth of California fruit but the complexity of the secondary elements is what makes this exceptional with dark chocolate, blackberry, charcoal, cedar with a hint of espresso lurking in the background. All of these are very well integrated so that the wine is both interesting and balanced. Super long finish that allows the more savory elements to linger on the palate. Excellent showing of a strong vintage.

I was concerned about the age of the bottle and I’m typically not a huge fan of Cal Cab but this was a pleasant surprise. The “pro” critics are too harsh on this wine in my opinion. The QPR remains questionable but this was a damn good bottle of juice that has aged gracefully.

It's second stage is rounding out. The tannins, fruits and acidity is coming into its own where other wines turn flabby. Drinks well after opening and throughout the evening.

Medium garnett in color. Still some hint of dark red fruit. On the palette, light in acidity and tannins; it felt velvety in the mouth. Subtle notes of fruit with much more earthy tones showing. In contrast, the 2015 drank at the same night had much more noticeable tannins and fruit flavours.

Decanted and allowed to sit for 20 minutes before tasting, the boldness had all but disappeared and giving more time to open up did little to bring out any depth. Sadly, I think we let this sit too long. While still having a hint flavor of Silver Oak’s exceptional grapes, this wine had zero depth and no mouthfeel. I thought that an 07 should have held up better, live and learn.

Was fully matured, full, bodied, and oaky, just as expected. It went wonderfully with the tournedos Rosini that I made. Was expecting slightly more opulence, but was still outstanding. I would give it a 96 point.

Opened 3 bottles last night while kids celebrated Halloween. Tasting notes match others commentary below. Nose is still fantastic and undoubtedly Silver Oak, but palate is definitely past peak. Perhaps 10 more years of aging would evolve to a different enjoyable profile—we also drank 1992 Silver Oak Alexander Valley and it was fantastic as an aged Cab—but if you know and love Silver Oak Napa for what it is, drink everything still in your cellar. (I’m now nervous about my 1997/1999 SO Napa).

same score as my previous note - dark red, medium brick rim - initially closed, but nose developed a bright cherry/blackberry nose with some complex barnyard smells after a 1 hour decant - well balanced body of cassis, cherries and mocha - medium 10-15 sec finish with a slightly bitter component - drinking nicely now, but fairly simple flavors - a more mature wine than earlier tastings, but not as much in the way of aromatic development as I had hoped for - would still give it the benefit of doubt for another 2-4 years

Sampled at Silver Oak's Alexander Valley facility, the 2007 Napa Cabernet was a standout. A deep garnet blend of 90% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 1% Cabernet Franc, it is aromatically effusive of black currants, dark bramble fruits, violets, bittersweet chocolate and pipe tobacco. Full-bodied, fresh and with well-integrated alcohol (13.9%), it delivers flavors mirroring the nose, wrapping them with ripe tannins and oak that has assimilated nicely since my last tasting of this wine in 2015. Dense on the mid-palate, it concludes with a lengthy, spice-laden finish. Fleshing out beautifully, well-cellared bottles should easily reach their twenty-fifth birthday. Drink now-2032.

Has a moldy cheese smell. Total funk upon opening. It mellows a little after sitting for 20-30 minutes. But it’s past its prime. A little flat. Just not for us.
Ruby color. Earthy nose with notes of mint and cedar. Intense cherry and blueberry fruit with ample cigar and cedar. Fairly soft with good balance of fruit and tannin. The finish lingering and evolving. This is very nice--probably a bit past peak, but only a little. Perhaps SO is overrated, but this is a nice bottle of wine and no complaints here.

I always thought Silver Oak was a tad overrated and last night didn't change my opinion only enforced. Decanted properly stored 2007 last night and 1st thought was oh my the funk on the nose LOL. It soon shall pass but an eye opener to say the least. Definitely past its prime as the dark ruby colors expected were almost starting to be come translucent. Some moderate dark berries and oak followed by very mellow tannins did nothing nothing to make this any better. Would have liked it about a year or two ago. Good but for sure just a little past its prime. Drink now.

Can't remember all the flavors on the pallet (a lot of bottles were consumed last night) but this was one of the nicest cabs I have had. Was wotn for most of the party. I wasn't expecting to like this. I'd bought a vertical at an auction a few years ago, and this was the last year in the vertical. I really didn't care for any of the others, they were all just rather ordinary.
This had a good tannin backbone that held up well to the Xmas standing rib.

Decanted >2 hours. It has been 5 years since we last had this vintage and in reviewing my notes from 2014, I can only say WOW. This wine, in my eyes, is a classic Napa Cab. Big red fruit with spice, vanilla and earth. Very mild tannins. Just a luscious wine that you could drink all night.
Although I rated this 96 points I would love to sit with an expert som and have them tell me why this wouldn’t be a 100 pointer. One of the best cab’s I’ve tasted.

PnP at the wine shop. Initially dark fruits with minimal structure. Prominent oak however (expected from this winery). Over a period of two hours the wine became muted and lost what little complexity it had. I don't believe this wine will get better with more time. If you have some Drink up!

Bought a bottle of this from the Healdsburg winery that we drank recently. I’m not a huge Silver Oak fan but can appreciate the wine for what it is. It’s a bit too soft and doesn’t have the extraction I like. The oak also is a bit much but that being said it is an enjoyable wine with nice flavors. The Merlot in the Napa bottling makes the wine more complex and layered compared to the Alexander offering. At $155 the wine isn’t cheap and I can find other fines I like more in this price range We had a great tasting at the Winery so bought the bottle to enjoy over the Holidays which we did.

Best right out of the gate, when it struck us as a bit more nimble on its feet. Delicious all the way through but resolved into a bit of a mono-dimensional, vanillin-laced, oaked mocha-cherry thing. We were all pretty happy with our prime rib at that point, so no one was complaining, but this isn't a thing I'd tell people to seek out at the price or to hold much longer.

Expressive nose of BlackBerry and touch of oak. The flavor is only one dimensional with bold fruit. The heavy oak is a touch distracting and too strong. It is a burly and decadent napa cab.

This bottle was unfortunately and unexpectedly past its prime. Blackberry, cherry, cassis and forest floor on the nose. It still had the Silvery Oak signature mocha flavor on the palate along with black fruit, cherry, forest floor, chocolate, coffee and spice. Very soft mouthfeel w/ relaxed acidity, a bit too relaxed as the wine had apparently deteriorated more than we'd hoped. Not as lively as it should have been. At only 10 years, this seemed too soon to be over the hill. Still a nice wine, just not what it would have/should have been.

Worth the wait and still going strong. Sufficient tannins and acidity to continue cellaring for another 5-10 years. Dark fruit, cherry cola and some tar notes combine in a well balanced wine. Decant at least one hour.
So, I hate the nose. It has nice attic smell, but then it adds something weird and funky I don't love. The palate is super dense but a by too jammy. Not my thing.

Silver Oak, esp Napa is always a solid, sometimes wonderful but always well made cabernet. This fit more in the solid camp. To my surprise, this wine was completely and totally resolved - not tired, mind, but no detectable tannins. Combined with the low acid and it might have leaned slightly in the flabby category. But still, nice oakiness, plenty of dark fruit on a full bodied palate.

Ok. Correction on my last note. Had this tonight with grilled tri-tip. It's in a perfect state. NOW, it still comes across was weaker and watery, but it is in perfect balance. Many of the 2007 Napa wines we are drinking now are more like Pinots, but this one still has a little life!

This is typical Sliver Oak Napa Cab. A bit surprised that this is not ready to drink as are a vast majority of 2007 Napa cabs. Needs 3-5 more years in the cellar or a nice long decant.

Had this before dinner with a rib roast. On its own, this wine is unreal. It for sure is a big wine, characteristic of when I think of Silver Oak. Drinking very well right now, but could sit awhile longer to mellow out just a tad. Very oaky/smoke flavor, with nice hints of black berry/currant. Dark in color with a nose surprisingly reminiscent of Rutherford.

Our Silver Oak experiences have been inconsistent, so we were happy to enjoy this bottle the way we did. Nice purple color, blackberry nose and palate, nice acid and balance, and resolved tannins make this a great wine to drink now. This was a complete wine with a smooth long finish that embraces the taste at the end. The fruit does not overpower, nor is it muted. The only problem I see with this wine is its price. There are 2013 vintages right now, such as the Papillon, that blew my mind for around 70, but if you want a Silver Oak to drink, this would be the vintage to drink now.

Weak. No complexity whatsoever. Decanted over 2 hours, and no life came to it. Extremely disappointed. I suppose this is one for the masses who don't truly appreciate great wines. If Walmart had a wine this would be their house wine.
We have been disappointed trying to cellar and age Silver Oak. Originally purchased these as our children's birth years thinking we would cellar till high school graduation and then, thankfully, decided against it. Drank a 2006 last year and it was way past its peak. This 2007 was starting to show funky, old French notes. It was still smooth and paired well with dinner of garlic mashed potatoes, truffled spinach and grilled tenderloin.

Brace yourselves: I think this wine is past its peak. It's been open for over two hours and is weak. Lost the body it had a couple years ago. Acidic. Had with grilled lamb and it did not hold up. It's ok. But not what it was a couple of years ago. Has the body of a Pinot now.
Drank for a valentine's dinner. Silky smooth tannins, blackberries, currants. No surprises here, you tend to know what you are going to get with Silver Oak cabs and this is no exception.

This blend of 90% Cabernet Sauvignon, 6% Merlot, 3% Petit Verdot and 1% Cabernet Franc retains a youthful, opaque ruby appearance. It offers aromas of black bramble fruits, espresso, chocolate, eucalyptus and dill. Full-bodied and with low-to-medium acidity, it follows with similar flavors which are framed by substantial chewy tannins and well-integrated alcohol (13.9%). The middle palate holds nicely, leading to a medium-length finish which flexes some tannic muscle. True to Silver Oak's style, this is a wine which will have many fans. It was a nice match with grilled steak and lobster. Drink now-2027.

Silver Oak isn't among my favorite Napa vintners. However, this 2007 (an outstanding year in general for Napa Cabernet) is very good. The alcohol isn't overwhelming. It starts fruity in the glass, but evolves over the course of an hour or two in which the fruit becomes less noticeable as chocolate and earth flavors become evident. The tannins are well-integrated and there is a nice midrange finish. This wine is, with a 30 min or so glass decant, ready to drink now. I've read some reviews that state this wine, with proper cellaring, will age well for 10-15 years. I DO NOT AGREE. It will be a stretch to age to 2018 as the wine will gradually disintegrate probably beginning 2017. Drink now to 2016/2017 for maximum enjoyment.

Better than the '05 and '06. I don't like to hold this wine long because it loses its fruit. I liked this wine and wouldn't lay it any longer. Good tannins and good dark fruit.
Not really flawed, but not what I expect from Silver Oak. The flavors were all there, just muted. The finish was short . . . like 8 seconds short. I thought it needed to open, but it never blossomed over the 48 hours we had it (vacuum pumped and chilled when not on the table) as I had hoped.

Nicely structured, excellent nose of cassis and tobacco. Medium-bodied, light tannins with some nice complexity and some blueberry on the finish. Overall (and I know this sounds snobby), it's just not something for which I crave the next sip. There's really not much "deliciousness" in this wine--it's just too generic and bland for me to desire at the price point.
ADDED NOTE: I enjoyed the wine much more after leaving it open for 24 hours (my original tastings were after leaving bottle open without a decant for 4 hours). Still not too complex, but very elegant with a smooth, lingering finish.

It seems that I always prefer the Alexander Valley to the Napa, even though that is typically not the case in other wines. Decanted for an hour and it was a little disconnected. Seemed to not deliver the smooth taste you have come to expect from the 2007 Napa vintage. IMO it will not improve with time but I could be wrong.
Tasted at Silver Oak. Medium ruby/purple color. Classic nose of dark cherries, black currant, dark chocolate and flowers. There are also some cedar wood notes. Similar flavors on the palate. pretty full-bodied and dense with great balance. Medium+ acidity and medium+ tannin that is silky. Good length. A very classic Silver Oak Napa. It combines Napa fruit with a very classic frame and structure. Also there are no signs of over-extraction and sur-maturite. It is very pricy though...

Decanted approx. 2 hours ... A little hot, but dissipated the longer it was open. Some smooth, up front fruit and a little cocoa and vanilla. A pop of acid adds balance. Developed some nice lushness, and an overall excellent wine. But just not a good value at all. Too many other wines out there at half the price that are doing pretty much the same thing. Nothing terribly special about this Silver Oak. ... Thanksgiving 2013

We had a gang here tonight and opened a lot of wine. We had it with steak (Kale and Quiche, really). In the glass it was thick and inky purple. We had an ope CdP at the same table and they were worlds apart. The tannins were soft, but present. I got the cherries from some of the other notes, and after reading it the butterscotch or even toffee element. There were no smoky or meaty elements you might associate with this wine. Regardless it was a hit and everyone enjoyed it.

Opened this and found myself really quite impressed by how smooth and bold this was (without being too aggressive with any one note). It does indeed air out very very well; the following night, 2 glasses later, I googled and realized it's $100 price tag could be a part of that.
It'd make a lovely gift wine, as I think a wide variety of red drinkers would enjoy it. I paired it with a gouda & braised red onion quiche, over kale/dark greens, and it went really well.

Liked it more than I thought I would at this point - quite fruit forward, but good tannic structure behind the fruit. Having not drank Silver Oak in a long time, the american oak notes hit me full stop at first, but after a while in the glass it became more balanced.

Very average; not worth the $90. Completely unbalanced with little to no finish. It hits the palate with a complete lack of taste and total weakness. Every time I drink Silver Oak I attempt to drink it with an open mind and rate it fairly, but it continues to disappoint me more than the previous time.

This opened up nicely over an hour or so. The first few glasses we had immediately upon opening the bottle. At first the wine was a constrained and the finish struggled for a bottle at this price point. By the second glass the wine had opened up beautifully and it now had subtle hints of soft oak. By the end of the bottle, it had developed amazingly. A fantastic wine! Magnum was the way to go!!

Typical reliable Silver Oak. Took a while to open up but eventually evolved into a lovely cab with a nice rounded mouthfeel. Nice smoky vanilla elements with full on cherry and plum fruit flavours. Not great value for money though at £90 a bottle (in London).

This wine developed greatly over the period of around an hour and a half. I had the first glass immediately upon opening the bottle. The color (garnet) suggested a much older vintage. The opening aroma was black cherries, tart cherries, and butterscotch. At first the wine was a little flat on the finish for a bottle at this price point. By the second glass the wine had opened up considerably; it now had floral essences, and an undertone of soft oak. By the third glass, throughout the second half of the bottle; the wine had developed into an amazing example of old-world style expressed beautifully by new-world grapes: rich, yet smooth, undertones of pine sap, and an intense lingering finish of tart cherries, rosemary, and mild vanilla. A fantastic wine!

Jammy and fruity and typical of California Cabernets. There is nothing special about this wine, but at least you know what to expect. It did pair well with the Argentine lamb as the fruit contrasted the garlicky marinade and the acidity cut through the fat.

*Tasted at the winery* Blackcurrant & blackberries mixed with sandalwood, beautiful exotic wood and slightly hint of delicate vanilla with dark chocolate and black cherries on the back end of the nose. Taste follows the aromatic components from the nose, with amazing structure, delicate fruit, smooth big clearly present tannins and overall balance. This wine is a perfect example of why I love Napa Valley and especially Silver Oak. It combines the lush rich fruit with a firm backbone and an overall complexity that really impresses me. This is in my opinion an outstanding and perhaps also an extraordinary Cabernet Sauvignon.

Dark crimson color with lifted aromas of dark cherry, licorice, espresso, and smoke. This wine is rich, creamy and yet maintains a lively character and texture on the palate with flavors of ripe berries, toasted oak, chocolate, and vanilla - all balanced by mineral-filled tannins that add just the right amount of grip on the spice-laced finish. Magnificent! This is one of the best I've tasted from Silver Oak. Drink now until 2020.

Exactly what you expect from silver oak - beautiful fruit right upfront, long easy drinking finish - with fruit everywhere. Definitively California style and a real crowd pleaser. Hard to argue that this is a good bottle of wine. Some with take issue with the price or complexity but all in all - damn good juice!

Tasted at the winery for the 20th time. 7 of the last 8 Friday afternoons, Lovely rich blended cabernet sauvignon and black chocolate cherry fruit on the nose, today is very rich and sweet chocolate taste, medium/big intensity, opened and improved in the glass over one hour, needs 2 to 4 years in the cellar and will show its best.

My first bottle of the 07. Normally I would not start drinking this until 2013 but we decided to host a Silver Oak night with friends where we had the 03, 05 and 06 so I wanted to try the new 07 as well. The consensus was that the 03 was the best of the evening but the 07 came in a close second. This could develop into a special Silver Oak. Time will tell. Typical Silver Oak nose, soft and smoooth velvet on the palate with better than average SO finish. No decant needed. Will try it again next year to see how it is doing.

Loads of fresh blackberries, sweet cassis, dried herbs and mocha emerge from the glass. This has a distinct creamy texture with the fruit echoing on the long juicy finish. Very tasty Cabernet. (Drink 2012-2020) 92+ POINTS

Not a big fan of Silver Oak (too light and frenchy in style for me), although I just had to try the 2007 to see if it was any better than previous vintages. It was for sure on the finish. Not much else has changed. Nose was a potent mix of herby-charcoal and black cherry Very light and elegant mouthfeel. Finish developed nicely after about 30 mins and ended up surprisingly complex with a mix of black licorice, dill, vanilla and red fruit and it lasted longer than previous vintages. Good, not great for me.
Wouldn't buy again, but glad I did it. l just missed that mouthfeel that wines like Lewis have mastered.
-- Consumed at at cellar temp: 60°-65° F. Friends don't let friends drink red wine at room temp!

PNPd, plus two hours of air thereafter. Initial pour showed lots of dill followed by mint, cedar and black fruit on the nose. Agree with previous note re dill pickle sensation, which dissipates after an hour or so of air. After that hour, a different cab appears. Initial cranberry, sour cherry, cassis and earth notes are replaced by black fruit, vanilla (only a little), and spice box. Tannins are smooth and well integrated. Not a contender for major cellar time, but drinking well now and should continue to impress for 5-7 more years. Probably not the best $/quality cab going, but a nice bottle.

Still early to be drinking this, but the wine is already fairly well balanced, and you taste see the potential for development. Ripe cassis and dark berry fruit, with notes of cedar, spice and earth. Will pull out another bottle in a couple of years to see the development.

Drink now.

At Silver Oak this afternoon, nose of black cherry, cassis, dusty forest floor, touch of mocha, more of the same on the palate, big body, slightly brooding character today as this bottle was opened in front of me, mouth filling wine, medium size tears of glycerin when swirled, suggests 4 years from peak, started to open nicely, very tasty, old style Cabernet Sauvignon, hint of soft tannins on the long finish.

Seemed to not deliver the smooth taste you have come to expect from the 2007 Napa vintage. IMO it will not improve with time but I could be wrong.

It combines Napa fruit with a very classic frame and structure. Also there are no signs of over-extraction and sur-maturite. It is very pricy though...

*Tasted at the winery*
Blackcurrant & blackberries mixed with sandalwood, beautiful exotic wood and slightly hint of delicate vanilla with dark chocolate and black cherries on the back end of the nose.

Soft and buttery. Actually ready now, unlike most 2007s. This is better than most vintages from Silver Oak. I don't think this has aging potential.
