This was the last wine in a vertical of 04, 02, 00 and 90. Makes you realise shy you should age Champagne. I love this, it's like a totally different wine in comparison with the young examples. Here is fudge, caramel but also mushrooms and deprived fruit.

Återigen två flaskor. Gjordes för Moëts 250-års jubileum. Här pratar vi mogen champagne, söt, knäckig, vaniljdrömmar.. Förvånadsvärd bibehållen syra. Lite svag i mellansegmentet. Det ena flaskan hade en besväran beska på slutet.

Birthday Dinner 03/31/2012 (Takashi Chicago, IL): En magnum. Outstanding golden clear color. Good bubbles, mouthful of mouse, pineapple, long finish, maybe reached a peak a couple of years ago, great, lasting in the glass.

The Other Great French Blancs: Champagne and Sauternes (Wink Restaurant, Austin, Texas): This was meant to be drunk by an English gent in another era. It was well-aged, mostly flat with an over-riding oloroso sherry palate.. Surprisingly most tasters liked it, though it couldn’t compete with “the bubbles.” Dark golden brown in color, with slight but underlying bubbles, it had a cake batter nose, also described as amaretto and port-like. It had plenty of acidity and some traces of oxidation, but lively creaminess and nuttiness, and flavors of caramel, coffee, toffee, ripe apple fruit, and yeast. And the finish was very good. It went very well with our cream puffs. Pocket billiards anyone?
