Community Tasting Notes (average 89 pts. and median of 88 pts. in 8 notes) - hiding notes with no text

Tasted by David J Cooper on 1/25/2020 & rated 89 points: Dark red with clear edges. Medium intense nose, green pepper, thyme, dark chocolate and plums. Very concentrated dry dark fruit and dark chocolate flavours and a very high acid almost shrill finish. (910 views)
Tasted by crazywineguy on 2/22/2018 & rated 93 points: Zero ullage. Took a glass out using Coravin. Dark centre with brick light red rim. Classic leafy cassis nose with hints of light menthol, eucalypt and boot polish. In perfect shape, a great surviving bottle/cork with a smooth very much alive palate. Drying tannins at the close with a real lick of blackberry. Filling out as decanted. Got to heap praise on an Aussie red that reaches the quarter century mark in perfect shape. Bravo! (1132 views)
Tasted by king-bing on 10/12/2017: Touch menthol on opening but this reduced. Deep blackcurrant nose. Pretty deep colour too. A little thin / hollow to start and rather a spiky sort of mid-palate. Drying tannins on the finish. This definitely improved with air and was at its best after around 2 hours when the spikiness had gone and the over-dry finish settled down. A decent drop if not terribly exciting. Holding up well, but do give it a decant. (1375 views)
Tasted by bhague on 4/16/2017 & rated 88 points: Still drinking well
Difficulty extracting cork, perhaps not surprisingly (1424 views)
Tasted by sphBacchus on 11/17/2008 & rated 88 points: Has aged well . (2963 views)
Tasted by chatters on 12/1/2005: good, like an older Bordeaux but with less complexity, v.smooth tannin. Nice wine but nearing it's end (2242 views)
Tasted by SadEdjo on 3/18/1999: typical delicious coon cab. earthiness; good black cherry & med. tannins. more restrained than 91 (2407 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
