Wow! Just beautifully pungent aromas pour from the glass. This is divine in the mouth. The flavors are savory yet also fruity, with a sharp and focused profile. The finish goes on. This is a great Loire SB. Probably will drink well for a few years.

Dinner at 312 Fish Market (Chicago, IL): Certainly very interesting, but perhaps also more interesting than good. Mercifully no overt sauvignon blanc notes -- but this is certainly a funky and earthy bottle of wine at this point. Clearly tons of lees influence, or else how would you get that sort of texture? For my palate, amply mature, but with still a little bit of freshness from the acidity. I do like the texture, but the depth of flavour is a little weak.

I'm a believer that DD wines age much better than most folks. The minerality and creaminess is still there as well as a lime citrus backbone all the way into the finish. It certainly is mature at this point but showed well on a warm night with a goat cheese-accented salad. I understand why they get consumed younger though since I've never opened a bottle I thought that wasn't ready.

11.5% alc; Mid bronze, clear brown edges Tertiary aromas of mineral, wet chalk, lemon, aniseed/dill and a hint of honey. A dry entry with sharp acidity, edgy texture, very linear in shape but accentuarted by the tartness of the acid. The mid palate opens to honey and lemon (lemsip), fennel fronds and a smoky, flinty note. Quite a grippy wine but has seen better days with the fruit waning or feeling a little monochrome.
