Complex and evolved. Lots going on between the nose and palate. Aged white Bordeaux is one of my favorites. The blend of varietals, the complexity. Notes of honey, vanilla, straw, tropical fruit, nice acidity still showing with a long clean finish. Wonderful.

For a 25 year old wine, this is impressive! White Bordeaux really can age well. No orange edges in the glass to indicate age, most of the wine group was surprised once they learned of the vintage. This wine still had some acidity to pair well with sushi at Arigato, and I will hold onto my other bottles to see how well they fare in the future. Currently in a great spot, as it has transitioned from being young, vibrant and acidic, into a mature wine which calls you to sip it and contemplate its benfits introspectively.

Sixth bottle from a full case purchased at auction in 2004. This bottle is mildly oxidised. The essential character of the wine is still easily recognisable, but there are also aromas of wet straw. They clear up a bit over 24 hours in the fridge, and I kind of like the lowland malt flavours on the finish, but the straw is not correct. Bottle variation, clearly.

(Domaine de Chevalier Blanc) Light medium golden color; sweet, spicy, candle wax and lemon grass nose; good, lemon grass and vanilla oak palate, but restrained and mature; medium finish 91+ pts.
