100% Cabernet Sauvignon aged in new French oak. 15.5% alcohol. Hillstone Vineyard is east of the Silverado Trail just north of Sage Canyon road, just north of Auberge du Soleil. I let it breathe for 45 minutes and drank over 2.5 hours. Ready to drink now. Fleshy nose out of the bottle. Starts out with strong licornice notes. After about an hour those notes take a back seat to inky currant and spice. Tannins are well-integrated--not overpowering but mildly chewy. Held up on day 2. On day 3 licorice notes are stronger and more acidic. So this is ready to drink now.

4th Saturday Group: Global Cabernet Sauvignon (Our house): Double blind. Aromas of dark fruit, fresh mint, cassis and sweet floral perfume. Firm tannins are fine-grained and have a sweet edge. Dark fruit and vanilla with a long finish. A powerful wine, but nicely balanced. Easy to pick out as Napa.

9.3+ Purple-black to the rim, totally opaque. Amazing nose that doesn't waft but explodes from the glass. Loads of black berry fruits at first, then you get the tobacco, baking spices, leather and caramelized vanilla notes.
The mouth remains fruit forward, is still quite tannic, but then the finish seems to be dominated by the structure of cherry pipe tobacco, cinnamon, nutmeg and more vanilla, solid dark cocoa.
Decanted for 3 hours, but it truly does need more time in bottle. It is a beast, but went great with fatty rib eye steaks. Has many years of life left.

Very well integrated and powerful wine that screams for attention. This was my first hillstone, first observation, this wine needs time to reach its full potential. Even after a double-decant and 3+ hours open before consumption, it was very tight. I won't open this wine for another 3-5 years.
Purple rich with a combination of black-red fruit. On the nose dark berry, currant, notes of cigar box, and black licorice. Tannins and acidy well integrated with a hint of bitterness on the post taste. Still very young and not even close of leaving its primary drinking window. Lastly the finish is just a summary of everything you can smell and taste, and very prolonged. I'm starting to think 2010 will be one of those vintage that need cellar time. But would they ever show the the sweet spot I'm looking for???...I can only hope
