Dinner in Sydney at Bambini Trust. Saw they had this on the menu for US$ 100 and thats quite a good price. Found out there was a release of library stock from the winery in Jan 16 and they picked up a bunch of stuff, now they only had another 4 bottles of this. Popped by the waitress and poured to taste - but there was no need to do so. Glass raised to lips, the exotic, intoxicating perfume of a nose washed over me. Candied apricots, lavender, cured butter, aromatic oil, charcoal etchings, grey stone, cedar, underbrush. The nose didnt hold through the whole bottle, going a little flat mid way through but that first whiff was and will be unforgettable. The taste was exquisite, cherries, jammed dark fruits, chocolate, rum, a hint of oak to buttress its richness and microscopic tannins to add traction and lengthen the flavour. Well structured with lively alcohol but just tamed enough to let the fruit flavours take centre stage. This is well nigh perfect Aussie plonk now, and should improve or hold for 2-3 more years. Seek out and devour.
