  • 2008 Château Haut-Bailly

    Drinking great, Nose has clean ripe purple and black bush fruit. Currants! Pencil with hints of dog paw. Nose leaning more low toned then high. Initial veil of freshness and lift quickly replaced by thick base notes of dark fruit and black soil. Palate entry is soft, creamy and rich, autumn leaves, remaining tannins are fully integrated helping to balance out the rounded fruit along with well judged acidity. Wine finishes dry with Oodles of salty minerality, crushed oyster shell and touch of sourness. Every third sip seems to bring the thought of something funky trying to emerge, “Brett-like” but, not. Planning to finish my remaining bottles before the new year Purchased as futures and stored accordingly... Na zdrowie

    An old school Bordeaux rule of thumb, Chateaux’s would put better quality wine into larger format bottles. Melchoir opened at a wedding would have better juice in it then say an Imperial opened at a Birthday Party would in turn have better juice then say the everyday 750ml. Never gave it much credence in this modern age but, based off the Jeroboam enjoyed this weekend, it seems valid. From the 750’s enjoyed since release, Jeroboam just had more. Lost its violet note and some bright freshness but, this was replaced by a more grizzled red and black fruit profile, Density and stronger tannic charge. Dry fruited with well judged acidity. Not terribly complex but, for the price point well worth it. Took an hour after decant to wake up and there wasn’t one single speck of sediment thrown off in the bottle. Wines age surely had something to do with the flavor profile and aromatic but, it didn’t remind of past 750’s of this same vintage. Or maybe it was just the Zombie Cocktails consumed prior to dinner service. Lol, Purchased as futures and stored accordingly... Na zdrowie

  • 2015 Jean-Michel Stephan Côte-Rôtie

    Have tried several vintages of this producer’s entry level cote rotie going back to 2005 with similar result. Would describe as flawed if I didn’t know the producer’s goal was to “create a wine without any corrective products, to enhance digestibility and aromatic complexity”. Wine was triple decanted. Lots of CO2 in suspension being released. Nose is indeed complex with Brett, Smoke, Burnt Rubber and roasted stones. Persistent acidic slightly caustic lift. It wasn’t until 2 hours after decants spent coffee grounds, hints of dark berry fruit and raw meat emerged still blanketed under CO2. Acidity seems High, not sharp but, giving a sour taste. If you’ve ever had a Lambic, its very similar. Soupy and cloudy, finish is short other than lingering bret. I can respect the vintners philosophy but, at a cote rotie price point this wine is something to be pondered rather than enjoyed with guests over a sumptuous meal. Suggest quadruple decant 3+ hours prior to service… Na zdrowie
