I finally figured it out… Anytime I can’t decide between a Hefeweizen or a Champagne, I reach for Ultramarine. The brats and kraut sparkling wine. The chotomy to my dichotomy.

No more sleepless nights. No more woe-ridden teeth clenching. No more, “Where does Ultramarine fit in to my cellar identity and how do I compartmentalize it in a way that doesn’t betray my allegiance to the cherished Champ?!”

Expressive nose displaying delicious yellow fruit, caramel apple, anise, brioche, sweet spices, and limestone. Medium concentration, generous succulent sweet yellow fruit, fine but medium generous mousse, bright acidity, fine mineral, and a medium to long sweet apple fruit-driven finish with anise at the end. This is a well-made sparkler but a bit different from Champagne. When tasted blind, I can certainly make a fool of myself.

Absolutely delicious. High acid stunner, with a complex nose and palate that's reminiscent of some of the best grower champagne but with a distinct California ripeness.

개인적으로는 새로운 경험을 추가했다는 것만으로도 꽤 높은 만족도를 가졌지만 가성비는 글쎄다.
물론 16빈이니 상대적으로 영빈(?)이었으니 그랬을수도.

노즈에서는 처음에 약간 톡쏘는 듯한 스모키한 향이 코를 찔렀다.
이어서 구운 빵이나 바게뜨같은 향도 이어졌다.
다만, 아쉬운 건 시간이 지나면 지날수록 향이 더 좋아진다란 느낌보다는 원래 없던 과실향이 조금 올라오는 정도.

팔렛에서는 바디는 크게 느껴지지 않았고 산도는 샴페인이라고 해도 믿을만큼 나쁘지 않았다.
약간 짭짤하게 느껴지는 미네랄리티도 나쁘지 않았으며, 시트러스한 과일의 풍미가 피니시에 더해졌다.
다만, 아쉬운 건 시간이 지난다고 더 좋아지는 것은 아니니 빠르게 마시는 것도 추천.

Overall: this is very funky and interesting, it almost has a finish similar to a sour beer. The bubbles are medium sized and frothy. Definitely very different and interesting!

Method: pop and pour; about 50 degrees; Glasvin Champagne glass; disg. 11.28.22

Look: light+ gold; strong streams of constant bubbles

Nose: unbaked sourdough, sourdough crust, lightly browned yellow apple, light almond

Palate: pear, brioche, sour green apple; medium+ finish of sour beer funk; dry; medium- body; high- strength pinpoint-ish bubbles; medium tart acidity

Overall thoughts: Kind of weird. Seems like a sparkling wine / sour beer hybrid. Tasty upfront, but a bit funkier and more tart than I want on the backend. I like the fine bubbles, but would appreciate if they were forceful. This is certainly interesting, but I'm not sure if the quality is commensurate with the price (especially on the secondard market). Good wine.

Very solid! Certainly the best non-champagne sparkler we have had.

Fine mousse, bright, light golden color. Fruit driven and fresh. Wonderful to drink.

PnP, drank over Mrs. Chugwine's 37th birthday dinner, next to a 1998 La Grande Dame and 2008 Vintage Salmon. Got to see the wine develop over about 7 hours. Strawberries and watermelon all over the nose, not a lot of acidity on the palette, somewhat flat. Good mousse, which helped overcome the lack of body. Not overly yeasty which I do enjoy, felt ready to go, even considering the recent disgorgement, Summer 2022. Not worth the $200 I spent on it. Would definitely buy at a $80 all day long

Didn’t love this, green hay/dried grass, thyme, red apple skin on the nose, similar palate but with more spices present, good acidity and energetic mousse medium finish

Quite vinous. Light vegetal notes that evolve into pencil shavings, violets, and a layer of reduction while in the glass as it warms down. Lovely texture with soft fruit. Doesn't drink like any Ultramarine BDN I have had in the past, nor any BDN, but it does remind me a bit of the 2010 Rose I had two years ago.

Fascinating wine, personally found it extremely enjoyable when all the layers hit. No score as I don't think I can score this accurately for what this wine is expected to be.

Meant to grab the original release but snagged the late disgorged on accident. Oops. Not sure what to think about this one. The first couple days were pretty tight and I was getting quite a bit of the dreaded 'cider' notes, which is the first time I've experienced this with an Ultramarine. The third day was better, but it still tasted less fresh than the other bdb's I've opened......but this is the first late disgorded that I've opened so I don't really have a benchmark. Maybe I just prefer the original release bottles??

To clarify, the asparagus becomes pronounced as soon as the wine warms past ice cold. Pro tip: only drink this when it's freezer cold!

This is mature and ready to drink. Very soft mousse and an overall mellowness carries over in total. There is a quiet confidence to the wine. Delicious. Corkage at zaytinya

I compared this 2016 BdB to the 2017 Haliotide Late Disgorged BdB to get a feel for styles. Followed over two days with no change.

One of the better Ultramarine wines I’ve had, and definitely pre-funk. I feel like the last few vintages have shown a lot of bottle variation and sometimes a green/herbal profile, mostly in the BdN and BdB (never in the rosé, that’s my favorite wine in the portfolio).

The older vintages always had a distinct cream-soda aromatic to them that I loved, and this has it in spades alongside truffle Honeycomb and spiced apple. Oxidative flair but not an overly oxidative sparkler. Great depth and richness here…almonds, lemon cream, caramel-green apple. Wears the low dosage so well. Broad on the palate (in a good way). I’d be fine drinking this without food. Tasty.

This really hit the spot for the first days of Spring. I'm not the biggest sparkling wine drinker, but I like the freshness of this wine. I have three bottles, so I'll probably sit on the other two for a bit. Glad to try one of these young, though.

Start by knowing that this is a Pinot Noir based sparkling wine. Out of the fridge, popped and poured. The color is gold with a slight blush. Plentiful bubbles - small to medium. Light plus brioche on the nose. The fruit is very evident in this wine - great Pinot fruits - strawberry and cherry. Medium minus acid. This is a sparkling wine that is a mouthful, but not overbearingly rich. Medium plus finish length. 12.5 ABV. Recommended. 92-94 points is a conservative score. Enjoy it now, or hold on to see where it goes.

Lots of citrus, hints of vanilla, little spice on the nose, mousse was quite aggressive to start with but after 30 mins settled nicely to show the lemon and apple fruit, decent weight, well integrated acidity and nice finish
