In the world of natural wine one has to kiss a lot of generally-overpriced frogs before finding the occasional prince. So mention of “eggs” and a Demeter logo on the label had the hype alarm ringing well before the first glass was poured. I was wrong. Beautiful rich golden hue in the glass. On the nose, fabulous aromatic complexity: white flowers, herbal notes, honey. Bone dry. Crunchy and fresh as a mountain stream, grapefruity citrus acidity, lemon, quince, bitter herbs, flinty minerality, a touch of reductive nuttiness on the finish. Not the longest but that zippy freshness keeps you coming back. Very good with the right foods. In less sensitive hands that acidity could have been overpowering but instead this is beautifully balanced. Drinking well now and the backbone suggests it might last a good while yet.
