Fundraiser Dinner for a local chef to help with his medical bills and also his foundation, Heard That Foundation, that helps other folks in the food industry with their medical bills.
A collaborative effort between chefs Will Salisbury, Misti Norris, Junior Borges, Josh Sutcliff, Petey Feng with donations from Chubby Dog Farms, Regalis TX, Chef's Produce Co, Minamoto Foods, Sam Assaad of MISA Imports, Profound Microfarms and Bullion.
We were able to bring our own wines and several wines were provided by the dinner. Brian, Monica, Clare, Michael K. were part of our group. A fabulous night of great food, wine and company.
The menu:
A. Mudpoint Oysters
I. Charcuterie, Grilled Bread + Steak Tartare
II. Cold Grain + Farm Vegetable Salad
III. Chubby Dog Porchetta, Grilled Yellowtail Snapper + Bok Choy, Kohlrabi, Dandelion Greens with Pickled Banana Pepper, Sauce Vert
IV. Peach + Apple Pie with Caramel Cherry Compote
The wines were all opened simultaneously except for the chablis, which was opened during the dinner. The LdH Rosado was a partial bottle gift from another table. The Ridgeview sparkler was served by the restaurant.

Yeasty. Brioche, apples, lemons, and some minerals. Bright and vivacious.

Yeasty aromas with mild oxidative notes, apples, chalk and minerals. Palate continues the mild oxidative notes, nuts, bruised apples, chalk and minerals. Excellent weight, concentration, and complexity.

Took about an hour to open up. Beautiful and seamless aromas of cashews and almonds, mild oxidative notes, salty sea air, apples, citrus and mild toffee. Palate carries similar flavors to aromas with added minerals. Excellent texture, smooth but with power and incredible concentration. Just great.

From 375 ml. Pretty red cherry aromas, spices, green stems, and minerals. Flavors on palate are similar with excellent acids, light bodied with a lovely elegant texture. Lovely. 90+

Aromas of honeysuckle, minerals, ripe apples and mild pineapples. Apples, pears, healthy dose of minerals on palate with some hints of herbs. Very nice acids. Great balance between the fruit, minerals and acid.

2008 R. López de Heredia Rioja Rosado Gran Reserva Viña Tondonia 92 Points

60% Garnacha, 30% Tempranillo and 10% Viura. Bright cherry aromas with flowers and earth and a mild oxidative note. More flowers on the palate with nice cherries, some strawberries, earth, and oxidative notes. Dry with abundant acids and a bit of bitter edge. Young but with beautiful balance.

2016 Roland Lavantureux Chablis 1er Cru Vau de Vey 91 Points

My first time with a Vau de Vey. Tart apple aromas, citrus with some nice iodine and briny sea breeze. Similar flavors on the palate with a nice minerality, and some mild chalkiness with sea salt. Excellent acids rounded out by the fruit. Young and I think age will show even more complexity.

2003 Santa Cruz Mountain Vineyard Pinot Noir Reserve Vine Hill Vineyard 94 Points

Stood up for several weeks. Decanted off sediment for 1.5h the night before, then back into bottle and opened the next night. Took about another 1.5h to start opening up. Aromas of green stems, forest floor, red and black cherries, some soy and sous bois. Palate had the red and black cherries with the forest floor in spades. Some hints of sous bois and soy that really emergedt on the last glass, almost 2.5h later. Concentrated with greater weight and more muscular than the Windy Oaks but still with elegance. Excellent acids. Really enjoy these bottles.
