I don’t drink a lot of Australian Shiraz. Typically find them too over the top. But I wanted to give this one a try since it had some good bottle age on it and was from a solid vintage. My curiosity was amply rewarded! This was a great example of what happens when you give wine some time. Secondary characteristics were prevalant and the big, bold fruit had revolves into softer, earthier tones.

showing some old dungeon notes of mature wine. Some oaks still hanging around. Slight heat at finish too. Still plenty of tannins and acidity, probably still a few years away for reaching pleateau but how will it be?

Perfect cork, no ullage so a well cellared bottle. Classic aged Hunter nose with leather, red fruits, barnyard, slight dirty character. Smooth medium bodied wine with still strong fruit presence but definite aged characters. Again classic Hunter shiraz in mouth with hint of VA lift, no Brett. Drying tannins on finish. Long finish. Best as a food wine (meat) where the tannins really softened up further. Given the comments this is both a great bottle and possibly the wine has taken a long time to come together. Getting better as it breathes at the 45min mark, a good sign.
