This Giaconda has evolved to be something completely different than what it would normally be about - Much more tertiary at this stage but still so very good!
Dried apricots, warm baking spice, champignons, quartz minerality, some desicated coconut, caramel, honey, dried mint and quite creamy on the palate. Unctous, almost viscous and very rich. Fantastic and so very pleasurable just by itself.
After about an hour when the fruit faded it became a luscious liquid creme brûlée!

Burgundy conversion for Sean (Incontro): White button mushrooms with almonds , lots of mineral stones n quartz. Some white gunsmoke and wet mushy moist moss. Sparkling mouthfeel. Really steely. Some biscuits. Great length n cleanliness. Lemony dryness.

Deeply flavoured with peaches, honey and stone fruit zest. Well integrated oak spice, roasted nuts. No hint of oxidation. Nicely softened with age but still crisp and finishing with youthful fruity zest. Creamy texture.
