  • Dinner at Waku-Ghin (Waku-Ghin, Marina Bay Sands, Singapore): A big wine that was a bit misshapened and lumbering, but somehow still managing to be a pretty decent drink. It had a really nice nose for one thing, with dark cherries and black berries wed to beefy aromas, earth and peppery spice, all this ringed by a lovely flowery waft and a touch of eucalyptus. I really liked that. The palate was just a bit too much though. While nicely fresh and well supported by velvety tannins, it was really big, almost oversized in a its gobs of black fruit wed to a meaty, chewy depth. Lots of power and presence here, so that the wine almost too big and a bit blowsy until a nice cut of grilled Aussie Wagyu beef came along to tame the fruit slightly, allowing a more savoury edge with notes of wood spice and vine stems to emerged alongside all that black fruit. All in all, a good wine for beef, but not one I would go out and buy a bottle off if it was commercially available.
