    👃Cherry, cedar, tobacco & florals
    👅Soft texture/bright acid. Red berries & plums, leather & tobacco. Long finish

    Remaining wine was "Slow Decanted" in my fridge

    DAY 11
    👃Glorious fruit, cedar, & tobacco.
    Same as day 1
    👅Silky, plush mouthfeel of the sweet fruit is really easy to drink. The fresh meshes beautifully with the oak notes & structure

    In a solid spot but will continue to improve as the tannins resolve

  • 2001 Vilmart & Cie Champagne Premier Cru Coeur de Cuvée

    👀Vibrant golden yellow color
    👃Apples:very ripe and bruised also.
    Biscuit, butter, lanolin, honey, & florals. Bold & elegant
    👅Quite vinous champagne. Enough substance, backbone, & flavor to deliver a great drink. Fruit from start to the long finish: Apples, lemon, orange liquer, & pastry

    Great with an aged gouda and a robusto
    Solid performer at 22 years from a champagne vintage without laurels. Bravo!

  • 2019 Hofgut Falkenstein Krettnacher Euchariusberg Riesling Spätlese #14

    "Slow Decanting" this young spatlese over a couple of weeks with the Vinloq System

    DAY 1
    👃Careens from the chilled bottle with limes and apples plus minerality & petrol
    👅Sweetness leads. Fruit, florals and acidity follow. The minerality is there for the finish. The acidity is fresh and palate cleaning. Lip smacking, if you will

    The remaining wine was Slow Decanted for 18 days in my refrigerator

    DAY 18
    This hasn't budged during the interim. Apple, peach, pear with lime on the finish. The standard hallmarks of Falkenstein are present with the extra midpalate density seen in so many 2019 German riesling. Classy. Fresh. Clean

    This 2019 is just getting started. It is delicious in this youthful, energetic state. I cannot wait to see where this goes as it develops over time in the cellar🥂
