Keeping madeira in a decanter is a Royal Navy tradition I inherited from my grandfather. An officer would always keep a decanter full of madeira and one of port in the house, to be passed around the table after each dinner. The decanter of madeira follows the port, and is always passed to the left! Strange traditions that are fun to keep alive in a modern world. You have an excellent cellar!

I hope your restaurant is surviving this awful mess of a pandemic - what’s happening in the industry is, of course, a tragedy. I often am in Portland as my younger son lives there - what is your restaurant? My guess is that the wine selections are made with more care than in most places.
