Purchased at Aita restaurant. Wine is a merlot, served chilled. Carbonic maceration fermentation and made without sulfites. Purple color. Nose offers some fresh plum and perhaps concord grape notes. Light fizz on the intro with fresh and lively juicy fruit. Good acidity that keeps the wine fresh and inviting. Quite delicious.
Paired well with a variety of pastas with both seafood as well as oxtail ravioli in a brown butter sage sacue.

Purchased at release (WinEx, I think) and cellared at 55F. Brought to a restaurant; wine manager broke the cork but was able to remove it without cork crumbs in the wine. Nose was a little funky with some basement notes. Flavor was not like the smell. Round red fruits - some cherry and cassis. Tobacco and leather notes as well. Showed a very gentle and elegant profile. Shows a restrained style of California cabernet. 91% Cabernet; 9% Cabernet Franc. Enjoyable.
The 1994 Kenwood Artist Series tasted the evening before was more vibrant than this Dalla Valle.

Purchased at release (WineEx, I think) and kept at 55F for years. Opened for a 30 year old celebration. Cork broke so there was some cork bits that needed to be filtered out. Dark garnet color with only slight bricking. Good nose of dark fruit and some herbal earth elements. Nice round profile showing some restraint. The level of fruit was quite surprising for a 30 year old wine. Blend of Cabernet Sauvignon, Merlot and Cabernet Franc.
