DECANTED AT 5PM AND TASTED OVER THE NEXT 5 HOURS. MEDIUM TO DARK GARNET COLOR WITH LITTLE OT NO BRICKING. THIS EVEOLVED FAVORABLY OVER AT LEAST 3 HOURS. NOSE HAD LOTS OF COMPLEX SCENTS LIKE CHERRY, BLACKBERRY BRAMBLE, LICORICE, CEDAR, PIPE TOBACCO AND SOUS BOIS. PALATE WAS QUITE TART EVEN AFTER SEVERAL HOURS IN THE DECANTER THOUGH LESS SO. PALATE ALSO MORE RED FRUITED AND TART WITH ACIDITY WITH SECONDARY FLAVORS REFLECTING THE NOSE. LONG NEARLY 60 SECOND FINISH. VERY ENJOYABLE BUT LACKING THAT SPECIAL SWEETNESS AND CHEWINESS THEY HAVE BECOME KNOWN FOR. VERY HIGH IN ACIDITY. EVEN AFTER SEVERAL HOURS IT SEEMED OVERDONE. WILL AGE WELL BUT NOT SURE THE FRUIT WILL “KEEP UP”.

Floral nose of old wood, cedar, leather, and black cherry, same on the palate, medium/big body, this was not a great Napa Cabernet Sauvignon vintage, especially after the vintages of 1984, 1985, 1986, and 1987, mouth filling fruit, bought at the winery from Charlie Wagner and cellared at 56 degrees which really helps when tasting, rich fruit, typical Caymus, wonderful for 31 years old, and a medium/long finish.

While well past its prime the wine was fine with the steak dinner. Bouquet was not meaningful but the the tannins were still there with leather, earth and some smoke.

Like every older CSS -- early over the hill. Light in color, pleasant nose somewhat complex. Not entirely without charm. bordeaux like - no Cali fruit bomb. Have been let down by many vintages -- Almost unique among great Napa cabs in its limited ability to age! disappointing but not surprising
I did not find this to be over the hill, but rather a bit musty with a medium body and softened tannins. ON day two after having used nitrous. I agree with the rich stewed and toasted fruit note.

Aged beautifully. Lovely nose of rich, stewed red fruit and "toasted" notes. Mature palate but fruit and soft tannins still very much alive and well. A real crowd pleaser.

An Evening of Alchemy (Alchemy Restaurant, San Diego): Opened at 4 PM, allowed to breathe in bottle, then decanted at 5:30 PM, then re-bottled at 6:30 PM and served at 9 PM. Clear dark garnet-blood-ruby hue, lightening at the rim. Rich bouquet of cherry pie, leather, cedar, cardamom. Like a very good Brunello. Upon opening, this wine was overly tart and dry, but improved steadily with air.

I think the group liked this better than I. Ruby/purple in color. The nose is nice with a dusty attic quality, cassis and some really dried out leather. On the palate, I would agree that this was the most solid, but it just lacked the stuffing. Cassis and cherries. It might have been the youngest tasting of the three Caymus we tried. Still, it left me wanting more something.

A perfect wine. It had aged beautifully. It was a brick red with hints of brownish-red on the edges. Not a fruit-forward as when it was younger, but very smooth and tasty.

I thought this wine drank incredibly well. Nice ripe rich aged nose. Just beautiful inhaling the sweet perfume. The finish was a bit lacking. It didn't have the big style that I love. Still good.

At the winery. Black ruby color. Very interesting nose is redolent with nutmeg. The mouth is big and bold, still a bit raw from casque. But showing great potential. 5-13-15-9: 92/100.

Caymus Vintage Tasting (Hi-Time Wine Cellars, Costa Mesa, Ca.): Rich, dusty, fruity nose, slightly closed nose, opened slowly, big, rich, fruity on the palate, fruit forward, less candy than the 1987, more structure, needs 4-5 years to peak.
