After letting it sit for 2 hours after the first small glass, it brought in hints of vanilla, peppercorn, and bell pepper rounding out the experience. The nose was elegant with lots of red fruits, cherries, raspberries, some notes of leather, and a hint of toasted coconut. The palate is medium bodied, nice mouthfeel, but felt a bit thin. There are some green pepper notes with this wine which I am attributing to the difficult 2011 vintage however it is very easy drinking and just overall tasty. Medium finish. Medium garnet color. M+ intensity aroma, quite savory, bell pepper with tertiary aromas - stewed plum - dominating. Solid structure - M+ acid and M+ tannins. Finish is long but body is not too full. On the palate, there is still a bit of the stewed fruit but also ripe blackberries and savory, vegetable notes - bell peppers and asparagus. Not a huge wine, quite elegant. About 2mm of penetration into a very well preserved cork. I was surprised that the stain on the cork was such a light rose color. Decanted leaving absolutely no sediment in bottle. After 2 hours this was really open and showing nearly all that I expected from this particular SO. There was solid red fruit and vanilla, with hints of truffle and saddle leather. Mouthfeel was fairly light, as were the gently integrated tannins. A very well made and tasty wine indeed, but lacking the decadence that I was hoping for in this price range. Cooper's Oak Winery and OAK Cooperage, Duncan Family of Silver Oak, Visit and Tour2011 Silver Oak Cabernet Sauvignon Alexander ValleyWinemaker Notes: Our 2011 Alexander Valley Cabernet Sauvignon is composed of 90% Cabernet Sauvignon, 7% Merlot, 2% Cabernet Franc and 1% Petit Verdot. It was blended in early 2012 and aged for 24 months in 40% new and 60% once-used American oak barrels. Early blending assures a balanced core and allows the components to achieve a seamless harmony during barrel aging. After bottling in the spring of 2014, the wine was aged an additional 18 months in bottle before being released in August of 2015. Tasting Notes: The 2011 Alexander Valley Cabernet Sauvignon is a harmonious and vibrant wine. This full-bodied, classic expression of Alexander Valley Cabernet in a cool vintage has a bright ruby-red color with purple undertones. The nose exudes aromas of black cherry, cedar and black olives. On the palate, its dried herb, cocoa and lavender flavors are framed by dusty tannins and a savory texture. It finishes with lively acidity and lingering persistence. Given proper cellaring, this wine should give drinking pleasure through 2029.Cabernet SauvignonCabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine.
