Medium straw/touch of gold. Very vibrant bubbles, almost like a soda, clearly not champagne. Light intensity yeasty and funky nose with some reduction, apricot, yellow stone fruit, green apples. It's a little out of balance, but to be fair this was disgorged very recently and I am drinking this before the recommended window.
Palate is bone dry (maybe not 0 dosage but in the 1-2g range), crisp and linear with ample but pleasant acidity, peach, citrus, minerals, some almost smoky nuttiness.
To me, this screams "I NEED FOOD", this would be a nice pairing with some seafood and beurre blanc.
I think I opened this way too early, as it's a little onedimensional and hollow. The nose also has some funkiness that's not pleasant. Palate shows lots of promise though. Give it a year before you try it. It needs to grow some shoulders.
