NOSE: the riot of stimulation is now winched and felted into something more coherent. Sliced serranos retreat into shadows of citron. Lemon-lime excavates shaded flowers. It presents elegantly in evening attire. MOUTH: I find more poise of character here, too. The usual markers of acid, sugar, body, and so forth, are inadequate terms for defining its features. It's not exactly dry, but it can certainly play the part. Acidity isn't glaring; it hisses sharply, below grade, in stone structure that supports the flavor event. In development, a drink methodically gathers savage aromatics—peppermint, saltmarsh, lemon, matcha. TIME/KINESIS: it clearly gains expression. The finish firms up, leaving a reliable, iron-rich quarried grip. The plumbing and drapes show exotic moments of spiced mandarin, rhubarb, and juniper in heavy perfume. It never relinquishes dry focus. It was 92 in the first 30 minutes, now after an hour, an emphatic 93. ________ 24 hours later, a very appropriate and stylish pairing with taqueria carryout—remotely reminiscent of Jarritos Grapefruit.

What is there to say? This is pure joy in bottled form. I am sure that Miran is going to be upset with me for posting about this wine, but I feel like sharing joy is important to do. Prickly acidity in the most playful way with gooseberries and all together in the most utterly delicious nectar that disappears in the glass so fast that evaporation doesn’t even seem like the culprit.

Aromas of pink grapefruit, lime, green apple, blackcurrant, ground cherry, green melon, mint, elderflower, a little airy peppery broth... Juicy and effusive on the palate, and gorgeous grip, is that some tannin? Persistent and pure, so lively and fresh, green apple, citrus and chalkiness mingle together long and pure, this wine just gushes from start to finish. I love it.
This has a little dissolved CO2, and the glass I'm drinking is disappearing fast enough that the gas will not dissipate much, but I'll revisit this tomorrow, as I expect it will be much amplified when that gas is less prominent.
In another life, I'm a Scheurebe farmer thinking about co-ferments...
Only got a quick taste on day two, it didn't really budge, was still super zippy, a little sweet, luscious and cutting at once. So good.

Klar, lys, nesten vanndig farge. Tydelige grapefrukttoner, sukkerlake og ananas på boks. Smaker som det lukter med herlig sødme. Leskende, saftig, rik smak, lettdrikkelig med lave 8,5 %. Heftig syre men det balanseres ypperlig av grapefruktsødmen. Nydelig vin og perfekt til sashimi! 90 p.

Very light in color. Fresh and mineralic. Fruity with pear. A hint of petroleum and white pepper. Too young right now and will probably benefit from years in the cellar when the acidity mellows down.
