Clearly shows the hot vintage side of Chablis (2018), yet still speaks of place. I wouldn't recommend aging particularly long, perhaps 3 years or so? It did pick up nuances as dinner progressed; however, I'd be concerned it would lose freshness relatively quickly as it is such a ripe Chablis.
We drank this with a scallop dish and a yellowfin tuna dish. The richness of these proteins happily complimented the richness of the wine.

Lemony and medium-spritely on the palate, with a nicely place sour pucker to add elevated interest to the otherwise medium delivery of yellow and green citrus flavors. Finishes with a touch of verve to add animation to the back end and keep the tail wagging for a few seconds longer.
More vitality than a 2018 Pinson Mont de Milieu consumed the previous day, the Servin is also a somewhat simple representation of the site but with a touch more energy and pulse. These 2018s are certainly less driven and dynamic overall than their previous vintage siblings in 2017.
Drink the Servin now and over the next few years (for my palate at least – not wanting to sacrifice the freshness and oomph that is currently here). 91+ points (maybe 92+? at certain moments).
