On day two, the mature fruit and leather came bursting out. Wow! Hot from alcohol, but this really came Alive.

Beautiful wine. One of the best I’ve ever had. Prototypical Paulliac with incredible aromatics and a lingering finish. Might not be the most recognised vintage, but this producer continues to consistently deliver. Cork was popped 5 hours prior.
Dinner at Maple & Ash. Decanted for half an hour before drinking. Needed longer as it continues to get better throughout dinner. Excellent nose with cassis and black fruit. Good mouthfeel with less structure and tannin than I expected. Fruit is fading but still primary. Very enjoyable with dinner and did not overpower the steak. Needs a longer decant.

Acidity: high.
Texture: medium+.
Tannins: high.
Finish: persistently long.
Aromas: pencil shavings/graphite, earthy, cherry, purple flowers, raspberry, and vanilla.

Typical depth of dark fruit and earth, and so well balanced. A great wine, although there are vintages that may be greater.
