a surprising bottle, called "Perpetuité" ! We are talking about a STILL champagne, made exclusively of Pinot Noir but its color/hue is like straw or pale old leaves. It tastes like an infusion of white flowers and pears but with a obvious acidity. Might come from the fermentation process that has to be short and before joining almost 15 years of previous reserve wines like a kind of "solera". it's unusual but good to be tried once.. We made this attempt with a poultry in a creamy sauce with morels. fair enough !

Coteaux Champenois tasting (Riga): Rose tinge - it is a 100% PN afterall. Fresh nose of tomato leaves, soupy, some herbs and spices, strange mish mash of aromas. Very high accidity, which made the wine unbalanced. (B/B-)
