Monday, December 27, 2021 - This IS a pairing wine. Uncorked at 11. Took an occasional sip over 7 hours. The tannins died down as did the floral and fruit. But once we paired it with pasta and salad (with tomatoes) the wine filled in the gaps of the food. Wow ! This is a wine to have WITH food. By itself one might give it a poor rating ; so don’t do that.
