A great match for my wife’s slow-cooked roast beef with root vegetables. Long and meaningful finish that enhances and complements the evening’s other flavors. I met Billo and a few of his key staff in Walla Walla last June. He’s bright, creative and focused with a ready and welcoming smile. There’s no doubt they love what they’re doing, and it clearly shows in this cuvée.

Saline, soy sauce, umami bomb. I could drink an entire bottle in one sitting.
Really don’t have the rocks funk, but has the savory parts of a cool northern rhone vintage.
The new French oak is already integrated and gives it amazing texture.
I don’t know if I would age this personally with fear it would lose the fresh saline quality that sets it apart.
