Dinner at 312 Fish Market (Chicago, IL): #05-21, 9.5% abv. Clean and crisp, with that light-bodied raciness that you should expect from Kabinett. Not particularly complex though -- a good drinking wine and not much more. But it's fairly priced and certainly shows a high pedigree.

9.5% abv. AP 05. 57-60° F. NOSE: a little starchy at first, until 24 hours later, when that flavor manifests instead as rainshower, sandalwood and mint. Bitter red apple peels, smashed with lemon filet, redcurrant, and rose. MOUTH: proper and slight wear in the acid profile enables the advance of massive volumes of appetizing, bitter mineral. Sweetness originates entirely from this stone fabric, and in efficient support of catastrophic floral abundance. 2020 is not quite the same amusing dining companion that the 2022 J.J. currently is. Try it with meditation. All that has changed in two years since my last drink is a fitting and marginal withdrawal of brittle detail. It still tastes new. At this rate it makes sense to wait until 2025-2029 before drinking it again.

I had noble intentions to save this bottle for a while to get a little more age in it, but alas I could not help myself. This wine is just too darn tasty to keep my hands off. This utterly delicious elixir from the super talented Julian disappeared quickly. Mouthwatering notes of lime confit, tangerines, and sweet spices filled the senses and made this absolutely irresistible. This wine has the stuffing to age, but I can’t say that I regret enjoying it in it’s youthful form.

2012 Pinot Tasting + some lovely supplementals (@Private location, Sersheim): Glass: Gabriel Standard
Fresh and crisp middle class Mosel Kabi. For me still a bit young and nervous, but already drinkable. If you give it 1-2+ years it will certainly gain some more complexity and balance. Nice and joyful.
