Decanted 45 minutes before service. In the glass, deep, saturated maroon. On the nose, cranberries, currants, and dried herbs. On the palate, jammy fruit, countered by bursts of fresh ground pepper, smoke, and a secondary note that is not quite as salty as "saline" or "beef blood" would imply, but it's there nevertheless. This reminds me (in a positive way) of the experience of first tasting the Saxum Paderewski - rustic, fruity yet complex, engaging.
