Droit, brioché, structuré, musclé, un vin sérieux assez complexe qui a besoin de garde car dans l'immédiat c'est un peu dur a boire mais son potentiel est excellent!!!

55% 2015/45% Reserves to 2012. Disg 01/04/23. 3.5 g/L. A very nice, classic BdB using wood for some choice seasoning. That is a nice ginger tinge. It finds a nice midpoint between full bodied and lean. A touch of autolytic and a pop of yeast. Decent depth says this will age fairly nicely. Not required though air did this some favors. Another quality wine from Doquet.

Les Copains, Seul, Korea. Oh suprise this is quite good! Typical BdB profile. Better complexity than most BdB NVs. Albeit at NV level the goodness of how the brioche side comes together pefectly with the lemon curd and green apple reminds me of Peters Chetillons!!! A wine i will want to revisit.

Organic. 55% from the 2015 harvest + 45% of perpetual reserve wines going back to 2012. Bottled in September 2016 and disgorged on October 13, 2022. The nose is gorgeously rich, spicy and complex. There is a TON going on here. The palate follows suit but all that richness and complexity is complimented by incredible freshness and vibrancy, not mention a slightly salty minerality, all of which really keeps you going back for more. This is beautiful and should continue to cellar well for the foreseeable future; I would definitely buy it again.
APPEARANCE: Color & intensity: pale gold
NOSE: Intensity: pronounced Aromas: baked yellow apple, toasted almond, brioche, baking spices (nutmeg, vanilla, slight hint of clove), crushed stone, walnut, hints of sweet tobacco and white flowers Development: developing
PALATE: Sweetness: dry Acidity: medium Alcohol: medium Body: medium (+) Mousse: delicate Intensity: medium (+) Flavors: baked yellow apple, baking spices, toasted almond, brioche, crushed stone, lemon, lemon zest, hint of salt Finish: long
CONCLUSIONS: Quality level: very good Potential for ageing: can drink now but has good potential for further ageing

Bottled in September 2016, disgorged on 3/8/2023, 55% from 2015 and the rest from a perpetual reserve started in 2012, 3.5g/l sugar. This came off as quite dense and ample for Chardonnay. Fine bubbles, ripe, bread and brioche, chalky and slightly oxydative. To me it felt brut rather than extra brut which might be a result of ripeness. Very good Champagne, needs food.
