Good to check in on this again. Slow ox one hour. Lovely subtle floral and red berry nose. The wine shows delicious ripe cherry on the palate with tea and earth notes. Grand cru weight and substance but nicely balanced and elegant. No hurry to drink this up.

Slow ox for an hour and a half. Black and red cherry, leather and truffle. Grand cru all the way - the wine is medium to full bodied, well integrated, silky but showing hidden power finishing with wonderful detail. This is at early maturity and should have a long life ahead of it.

This is actually labelled as the Chezeaux Griotte made by Ponsot, which I believe is identical to the Ponsot.
Decanted half the bottle for an hour and slow-oxed the other half in bottle, and then finished the last quarter the next day. The wine was showing less than I expected. The nose was almost completely muted and required a lot of aggressive swirling to reveal anything. The tannins are not harsh but they are very present, and a core of blue fruit is still hiding underneath. Even on the second day the wine was muted on the nose and palate. I have three more bottles and I won't open the next for another 4 or 5 years.
One caveat -- I purchased the 4-bottle lot at auction and drank the first the day after I drove it home, which is typically a no-no w Burgundy, and it's entirely possible that the wine was "rocked" and needed more time to settle. So delicate these wines, and so much bottle variation.
