Pyramid Valley tasting at 67PM with Steve Smith MW. Drank in Zalto Universal. Perfect provenance bottle. Appearance is clear, medium intensity, yelow lemon colour. Legs. Nose is clean, pronounced intesnity, with aromas of aged nutty integrated oak with lovely honey drops, citrus lemon cake, soft creme brulee. Developed. On the palate, dry, high acidity, medium alcohol, medium+ body. Medium+ flavour intensity, with flavours of honey drops, citrus lemon cake, nuts, creme brulee. Long finish. Excellent quality. Love it. Such aged goodness.

Color beginning to connote age. Nuttiness, white and tropical fruits, some mineral on nose. Palate has definite oily fruit weight with persisting flavor and presence. Decent acid balance, again with some mineral. Good expression of new world chard, but lacks elegance and precision.

Well I almost made it a year before drinking my last one! Biodynamic theme out for dinner after a Joly tasting, so this fitted the bill perfectly. Quite happy I opened it now rather than later, it seems quite well developed and in a good place. Acid has dropped away a touch, overall quite rich and harmonious.
