Sunday, May 26, 2019 - On the nose, lovely fragrances of violets, blackcurrants, jambon cru, and dry undergrowth. Penetrating fruit on the palate with a dense vein of dry tannic crunchy jam and a spicy aromatic back note. Complex happenings across the palate from front to back. Delicious with sous vide mint lamb chops and roasted cauliflower.
