Wednesday, February 7, 2024 - Popped and poured, gave small aeration with seive. Fine sediment. Orange hue. Mature Barolo once again in a prime spot. Tannins not too big but present. Lots of soft cherries with good secondaries, beautiful nose, and in a great place tonight. Went well with homemade roasted veggie pasta sauce. Need to buy more of these aged Barillas to restock my celler. Still rocking on night two with it only being recorked.
