Extremely reduced, or so I thought, 3+ hours and still has not come around, reductive like aromas that won't budge.

A clear ruby color. A very elegant and pretty nose that balances the mild intensity of the fruit, with florals, wood spice and savory. Fresh wildflowers, a touch of earth and mint, sappy fruits like strawberry-rhubarb, red summer cherry, and pomegranate, then spice and wood-like sweet cedar and sandalwood fade into the fresh and juicy finish. Beautiful elegance and charm, with excellent acidity and super fine tannin. Drink now or hold for 5 more.

Do NOT decant, open, pour, and reseal bottle as it falls apart quickly. If you love old Bordeaux there is some of that in here, but it is very fleeting and this came from very good provenance,

"As Caborcas" 2010 by Telmo Rodriguez
.
A single vineyard field blend of old vine Mencia, Merenzao, Souson, Garnacha, Godello, Brencellao planted above the river Bibei in granite terraces just like the Northern Rhone, but instead bush vine trained.
.
Incredibly similar to a crunchy and savory #Cornas but all #Mencia with mellow red and savory fruits, cracked peppercorn, smoke, a touch of tar and flower petals with a beam of granite mineral spine. Simply awesome! This was one of my favorite finds on a trip to Spain in 2015 where I met Telmo and spent the afternoon with him in the vienyards and tasting at #Remelluri. The dude is larger than life, an inspiration! FYI he is a Burgundy fanatic!

Radiant and transparent Cabernet showing excellent purity and very good typicity and acidity. Spottswoode is always so consistent for me and always so impeccably pure. The 2008 is 92% Cabernet Sauvignon and 8% Cabernet Franc that shows beautiful Cabernet traits, something the best Napa wines excel at. What many wines in Napa do not necessarily excel at is revealing the terroir of site, this vintage of Spottswoode shows terroir in spades. Cassis and currants, a dash of mocha, a touch of graphite and rock, with white floral and violet aromatics in the background. A nice streak of minerality shows up on the mid-palate and finish. The tannin are ripe, full bodied, but fine and supple. The acidity here is key, it elevates the aromas, as well as adds lift and energy to the palate, while refreshing the finish.
@spottswoodewinery makes some of the most consistent and honest wines from #cabernetsauvignon not just in Napa but the world. #spottswoode #cabernetsauvignon #sthelena #napa #spoton

Solid wine, 15 years young from the 1999 vintage. Cabernet from Piedmonte region of Italy. Tastes like a Bordeaux, but with more acidity and mineral character you see in Nebbiolo from these parts of Italy. Plenty of life left. 5-7 years easy or more. Fine, but firm tannins frame the finish of dried currants and cherry with some grilled herbs

Amazing what a week later after Coravin and some air can do. Acidity preservation at its best. The wine is longer, with deeper aromas and flavor. Front to back of the palate this is complete where it was not initially when first opened a week ago.

As lovely as a I recall when I was first mesmerized by this wine. Saline, citrus, tons of minerality and well integrated oak fuse together nicely to bring an elegant and pure expression of Meursault.

The sun shines in this bottle from a warm vintage. Fleshy, the ripe tannins and Classic Corton structure are a nice foil so you can enjoy this sooner than normal.

I reserve a higher score for a few more sips, I am so impressed and blown away at how fun and tasty this is, even a little serious in fact. Gamay sparkling, a new one for me. A #garagiste pick, I'd get this again for sure.

An excellent mousse, potent bubble streams, sappy red fruits and excellent fresh acidity.

Elegant strawberry and raspberry wound up with rocky minerality, some Provencal scrub, and sea air. A fantastic, gentle red to have with fish and other poached or lightly seasoned cuisine.

Best. Vermentino. Ever.

Pear, saline, chalk stones, and straw. Sicilian lemon pith on the palate adds citrus.

Fabtastic fresh clean and mineral purity. Like a cool breeze on a hot day.

Clear, deep lemon color intensity
NOSE
Clean, medium aroma intensity of stony minerality, petrol, and lemon, a developing nose
PALATE
Off-dry sweetness, medium+ acidity, medium bodied, with low alcohol (8.5% abv), medium+ flavor intensity of lemon, peach, honey and slate stones, a medium+ finish
CONCLUSIONS
Very good, well balanced with refreshing acidity, pure fruit and mineral flavors, Ready to drink now but has aging potential

APPEARANCE
Clear, medium intensity ruby color, sediment more apparent (but not intrusive) in the final 2 glasses of wine.
NOSE
Clean, with medium+ aroma intensity of cherry, mocha, cola, licorice, and cassis with a developing nose
PALATE
Dry, medium acidity, medium+ tannin and body, and high alcohol, with pronounced flavor intensity of graphite, cassis, bing cherry, black raspberry, and mocha, this was a complex, and layered wine with deep flavor intensity and a long finish.
CONCLUSIONS
Very good quality, this is "par for the course" with Paul's wines as he acheives a high flavor intensity while still managing depth and freshness, Ready to drink now, but can benefit from 5-10 years more aging

In a closed place right now. What we did have hinted at being great, elegant and refined. Not a hot mess, like many CdP have been like lately. It should be opulent Grenache at its best when it comes around next. (93-96 range)

Too young and also in a sleepy phase. The decant helped bring it around after about an hour but it was not at its best, could easily go 95 when it's open for business. Some meaty notes, with elegant red fruits, and oak that was fairly well integrated. 94-97 when it comes around?

Was expecting a much heavier wine, but this was more elegant on the palate. Don't get me wrong, there is plenty of concentration, lots of fruit and well integrated oak. Modern for sure, but with focus. Vivid black cherry, blackberry, mocha, plum and tobacco rise easily from the glass and fan out on the palate. Medium+ tannin and body. The finish is fine but long.

Good acidity and fruit but I find the tannin is too much at this point, a little too chewy. It's fine and supple, however there is too much of it compared to how much more elegant the rest of the wine is. Taste is a 93, texture is an 84.

APPEARANCE
This Champagne wine is clear in appearance, with medium gold color intensity. The mouse is fine with persistent bubble streams.
NOSE
This nose is clean, with medium+ aroma intensity of leesy notes like fresh baked bread, biscuit, a touch of cream and then fresh red apple. The nose is developing.
PALATE
The palate is dry, medium+ in acidity, with a medium body and alcohol. The flavor intensity is medium+ with the bread and biscuit notes following on from the nose, with a juicy acidity and fruit flavor that reminds me of fresh red apple and pear fruit slices and a beam of stony minerality. The finish is medium plus with a lingering chalky texture on the palate.
CONCLUSIONS
Outstanding quality, this "Grower" Champagne wine is precise, superbly fresh and balanced, with complex nuances. it does not try hard, but once you pay attention it is hard to turn away. This wine is ready to drink now, but has potential for aging.

Yet again 2002 blows me away. This is drinking, to me, well beyond its years and has plenty to go. The tannins have mellowed out to fine dusty silk. Plum, mocha and cassis with a sweet, creamy touch of well integrated oak are the perfume and the palate.

If it's hot out and you want a red wine, this is where to go, Beaujolais Cru wines, preferably from the Cru sites of Morgon, Fleurie, or Moulin-a-Vent. Brouilly is good too with the right producer. Aromas and flavors of red berries crushed onto limestone rocks. The weight is what makes it great when it's hot out as this flows over the palate with ease and freshness from the electric acidity. #foillard

Orange wine, completely opaque in color and clarity. Maybe it was just me but I enjoyed this a lot more 2 years ago. However, plenty going on here with slight oxidized aromas, high acidity, zesty lemon and grapefruit rinds, loads of minerality. After about an hour the aroma turned to dry cigarette tobacco.
