Went out on a limb and paired tonight with Muthiya, an Indian dish appetizer. Turned out to be an excellent pairing. The savory of the Muthiya brought out a little sweetness in the wine. Muthiya is a dumpling with cabbage. The acidity of the wine cut the savory and sweetened the wine. Excellent wine when paired with the right food. |

Medium to light body, high acidity and very low tannin. High acidity and off dry leaning to sweet. Paired with shrimp and 2 choices of dipping sauce. 1st a chipotle sauce with a bit of spice. This Riesling paired perfectly with the spice. Just enough acidity and sweetness to cut the spice and bring out even more sweetness in the wine. 2nd sauce was a champagne mustard remoulade, which brought out additional notes and paired well. |

Needed more time to open up. After sitting in the glass another hour the wine really blossomed and burst open with more fruit and the tannins smoothed out. Paired with bacon wrapped filet, grilled broccoli and a Dilled creamy potatoes. The bacon wrapped filet softened the tannins. The grilled broccoli brought out the fruit. All around great wine pairing and very good wine from Hall in the sub $100 price. |

Both oak and fruit tannins in this wine. Medium acidity. Long finish with layers of flavor and complexity. 88% Cabernet, 6% Cab Franc, and 6% Merlot. Paired tonight with a Vegan Shepherds Pie and was a wonderful pairing bringing out additional fruit notes and slightly sweetened and softened the wine. |

Paired tonight with an expertly prepared, from scratch, vegan lasagna. Paired with the lasagna, the wine delivered additional notes of black pepper and spice. Loved this wine and the balance.
