With air, it put on weight, deepened (enormously) in color and the tannins emerged. So, it’s evolved…a bit but it’s also splendid. An outstanding pairing with rosemary, garlic poussin draped in prosciutto. Deep, sour cherry flavors are haunting and so distinctive. Bravo! |
