 Tasted by King Cab on 12/21/2011 & rated 91 points: 2 hour decant and needs it. Dark and viscous, the nose is all sweet black fruits tonight. Cassis, pomegranate and plums, this has a finely poised creamy texture, something reminiscent of a Dr. Crane Cabernet. Palate shows deep and pure blackness. Some cedar, leather, tea leaf and cardamom. A pretty wine with notes of spring flowers and violets. Great balance and nearly fully resolved, this is a very distinctive wine, maybe a wee 'too' sweet in profile. A long finish and your on track for a very decent evening. very decent. (3686 views)

Mouthful of black berry, sweet black raspberry (more predominant a few days later), cedar, spicy oak and a slight hint of anise; full finely integrated polished tannins on a long flavorful finish. Flavors of black ripe plum, black currant and spice. It just got better during the night. In 5 or 10 years this may even be better. (2749 views)

 Tasted by yonster24 on 8/20/2008 & rated 95 points: The wife and I went to dinner with our friend and his girlfriend who are managers at Ruth's Chris Steakhouse. I decided to bring this bottle, a Schramsberg Rose and a Muscat.

This bottle was the star of the night. I could tell you that it had notes, of fresh leather, licorice, cedar and red currant among other things. I could tell you that this showed absolutely NO signs of aging and could last another 10 years at least (In my opinion.) I could tell you that even after 90 minutes of decanting this was still young and tight and needed another 30 minutes and that once open, the finish was took longer than a marathon.

But I won't tell you any of that. I won't even mention that. I will just say that this wine matched my New York Strip steak perfectly. This wine made this meal and this time wonderful. This wine made our dinner a wonderful event. I adhere to the "there are no great wines, only great bottles" theory. Well this my friend, was a great bottle. (2274 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
